Matured in Style, Aged in Oak.
For the red wines, the vatting stage
lasts for six to twelve days. For the white and rosé
wines, the vinification method is quicker and the wine
is bottled within the first year in order to preserve
all its flavour. The red wines, however, are matured
for at least two years in vats or in barrels. Certain
Cuvées require longer maturing, and the Cave
du Marmandais therefore keeps a large stock of oak barrels.
Nothing could be better than new wood when it comes
to exalting the flavours of the wine.
Finally, six months after bottling,
that characteristic colour and bouquet of the Côtes
du Marmandais develop.
